Quinoa Jambalaya -

I forgot to take a picture - and this turned out so yummy that there's none left!

Ingredients:
1-2 chicken breasts
1 package spicy chicken sausage (I used jalapeno cheddar this time)
1 qt chicken stock
2 medium tomatoes
1 white onion
1 each red/yellow/green bell peppers
1-2 cups of uncooked quinoa
1 ear corn (optional)

Get out your crockpot - this recipe is easy-peasy!

Cut up your chicken breast into bite sized pieces. Slice the sausages. Chop your veggies - I like to do long thin slices because they cook up nicely. Puree the tomatoes. Toss all meat and veggies into the crockpot with the stock. Cook on HIGH for about 3 hours. When the meat is fully cooked, rinse your quinoa thoroughly (it tastes bitter if you don't wash it well!) and toss it into the pot. If you're going to use corn slice it off of the ear and toss it in as well. Let it cook for 30-45 minutes more... And that's it! It's a little spicy and super yummy!

  1. Nice! I'm fully going to try this. I just got into quinoa (I know, I know - late bloomer) and am always on the hunt for easy quinoa recipes and I love Jambalaya. I have a quinoa lasagna one that I LOVE. I'll shoot it to ya if you like:)

  2. Would love quinoa lasagna! Please send it over. (not sure B will love it- he refers to quinoa as, "that STUFF you love to feed me" LOL). Also I forgot the tomatoes in the recipe list! I puréed two tomatoes and added them to the original stock. :)

    1. Erik turned his nose up at the lasagna the first time I made it simply because of the idea of quinoa. However, he ended up loving it more than I did:)

      LASAGNEQUINOA
      1 can peeled tomatoes or
      4 roma tomatoes, chopped
      1 lb hamburger or veggie burger
      2-8 oz cans tomato sauce
      3 cups quinoa, cooked
      1/4 lb mozzarella cheese, crumbled
      1/4 lb parmesan cheese, grated
      1/4 cup olive oil
      1 tsp salt
      2 tsp oregano
      1 cup onion, minced
      1/2 lb ricotta cheese
      2 cloves garlic, minced


      Sauté onion and garlic in olive oil until browned. Add hamburger, cook until browned. Add tomato sauce, tomatoes, salt and oregano. Simmer. Preheat oven to 350 degrees. Put layer of this sauce in bottom of 13x9x2-1/2" baking dish, following with layer of quinoa and layer of cheese. Repeat two more layers ending with sauce an extra Parmesan cheese on top. Bake about 35 minutes. Serves 6-8.
